You’ve Never Seen a Pork Chop Like This


La Chuleta Can-Can is a classic Puerto Rican chop made with pork loin, ribs, belly and skin. At Porch Light Latin Kitchen in Atlanta, GA, chef Andre Gomez brings the Puerto Rican chop to the US. He brines the two-pound chop then grills and deep-fries it until the skin is crispy. The dish is served for the table with grilled lime and garlicky mojo sauce.
