Newsom’s in Princeton, KY is nationally known for their Col. Bill Newsom Aged Kentucky Country Hams. The hams are salt-cured and smoked over hickory chunks and sawdust, then left to dry in a ham house controlled by Kentucky’s natural climate.

A recent editor for Eater visited Col. Bill Newsom’s store and sat down with Nancy Newsom Mahaffey, known as the ham lady to talk about the history of their family-run business and award winning intense, complex, salty, nutty, funky, fruity hams.
