Caribbean Lime Grilled Pork

Yield: 12 Servings

Pork sirloin chops, 3/4-inch thick  12, 6 oz. 
Lime juice  3 cups 
Salt  2 tsp 
Red pepper, crushed  1 tsp 
Cayenne  1 tsp 
Red onions  2 large 
Method of preparation
Place chops in glass pan; combine lime juice, salt, crushed red peppers and cayenne. Pour over pork. Cut onions into 1/4-inch thick slices and place over top of pork. Spoon marinade over onions to coat. Cover and refrigerate at least 6 hours.

Remove pork from marinade; reserving onions and marinade. Grill chops to medium doneness. Place reserved onion slices and marinade in saucepan. Bring to a boil, reduce to a simmer and simmer 15 minutes.
Serving Suggestion
Serve chops with simmered red onions and fruited coconut rice.
