Pour over pork. Cut onions into 1/4-inch thick slices and place over top of pork. Spoon marinade over onions to coat. Cover and refrigerate at least 6 hours.
Remove pork from marinade; reserving onions and marinade. Grill chops to medium doneness. Place reserved onion slices and marinade in saucepan. Bring to a boil, reduce to a simmer and simmer 15 minutes. | | Serving Suggestion | | Serve chops with simmered red onions and fruited coconut rice. |
