Burgundy Pork Simmer

Yield: 48 Servings

Boneless Pork, cubed 12 lbs.  
Carrots, peeled and diced 3 lbs.  
Vegetable oil  3/4 cup 
Dry red wine  6 cups 
Thyme  1/4 cup 
Salt  2 Tbsp 
Garlic powder  2 Tbsp 
Tomatoes, canned, cut in chunks  9 cups 
Celery, diced  14 cups 
Raisins  3 cups 
Method of preparation
Brown pork and onions in oil. Stir in wine and seasonings. Simmer covered for 45-60 minutes or until pork is tender. Stir in remaining ingredients, simmer and additional 15 minutes. Serve over rice or noodles, if desired.
